Carrot is a a root vegetable that grows around the world in every country.

Carrots are also called fucus carota L.., it belongs to the family of apiaceae.
Firstly they were used as a medicine in the 10th century.


Carrot's root flesh colour maybe, orange white, purple, red, yellow, or dark purple. The first carrot that were cultivated were purple and yellow flashed.

The two major antioxidant pigment found in carrots are carotenoids and anthocyanins.

In Nutritional composition, carrots have been ranked 10th amount 39 vegetables and fruits.

Carrot is a great source of dietary fibre and also contains are rarely found mineral called molybdenum.

Molybdenum helps in absorption of iron, and also aids in fat's and carbohydrate's metabolism.

Carrots are also good source of manganese and magnesium.

Magnesium plays a very important part in making new cells, bones, protein, activating B vitamins, relaxing muscles,  nerves energy production, blood clotting, insulin function, and secretion.
Manganese help in coordinating with enzymes in the body.

1)Coloured vegetables often have more antioxidants, and carrot is one of them. 

Carrots antioxidant like polyphenols carotenoids and vitamins act as immunosensors,and anticarcinogens.

Carotenoids present in orange carrots may neutralises the free radical's effects. 
In some researches they have been shown to decrease the risk of some cancers.

The phenolic derivatives and flavonoids present in carrots also works as antioxidants.

The study also showed higher blood levels of carotenoids, after participants consumed 8 ounce of carrot juice for three weeks daily.

Higher consumption of carrot juice may lead to a condition called carotenemia, in which your skin turns yellow or orange because of high blood levels of beta carotene.

Drinking too much carrot juice may also spike your blood sugar.

Carrot juice is full of vitamins, minerals and antioxidants that are good for your eye health and also for completing your daily needs.

Carrot juice may help you to reduce risk of some cancers, and may also provide you better immune system.

But it's important to eat different vegetables rather than just one.

Eating just carrots can make your skin look orange or yellow because of beta carotene.

Anything consumed in high amount will always give side effects, so it's better to to drink safe amount of carrot juice.
